The concept of organic farming is partly how the animals are fed and how the land they live on is farmed, but it is also
how the animals themselves are treated. A contented animal has less stress and better growth than one treated as no more
than a walking piece of meat. Two examples stand out :-
- Hand-reared cattle are more trusting of human beings, because they expect decent treatment from their herdsman. This
means that bulls are far more tractable and less dangerous, coming in expectation of a pat or a titbit rather than making
ready to defend themselves from abuse.
- Hand-reared sheep are less wild, associating human movement with fresh pasture or hay and not wasting energy dashing
away from anything that moves. This also means that they have less stress and again put on weight, as well as being far
healthier.
When the time comes for slaughter, the animals are treated humanely and killed as swiftly and as painlessly as
possible. Respecting the value of each animal, its meat is carefully jointed or filleted and hygienically prepared, to
ensure that the care in the rearing is not wasted. The meat is vacuum packed and stored chilled or frozen until sale.
